Besan Ki Subzi

Besan Ki Subzi is a delicious Indian recipe made with besan and onions. It is served as a side dish to rice.

Besan Ki Subzi, Ancient Recipe of BiharBesan Ki Subzi is a delicious curry which is another delicious Bhojpuri specialty. The dish is similar to "Gatte ki Sabzi" which is very popular recipe of Rajasthan. But "Besan Ki Sabzi" is cooked differently in Bihar. The people there think that it taste same as a fish curry and call this as "Besan Ki Machhli" too sometimes. Besan Ki Sabzi goes well with rice.

The cuisine of Bihar is predominantly vegetarian. This is because most of the population of Bihar is mainly Hindus or Buddhists. The cuisine of Bihar is a mixture of North Indian and East Indian Cuisine.

Ingredients for Besan Burfi:

•Besan (Gram Flour) - 1/2 cup
Mustard Seed - 1/2 tsp, paste
Cumin Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
•Red Chilli Powder - 1 tsp
•Mustard Oil - 2 tbsp
•Tomato - 2, chopped
•Coriander Leaves - 1 tbsp, chopped
Fenugreek Seed - 1/3 tsp
Ginger-garlic Paste - 1/2 tsp
Salt to taste
•Green Chilli - 2, finely chopped

Method:
1. In bowl put gram flour, add salt, pinch of turmeric powder, green chilli and 1/4 tsp ginger-garlic paste. Mix well.
2. Add water and make a batter of dosa batter consistency.
3. Heat frying pan or tawa spread a little oil on it.
4. Pour about 1 ladle of batter add spread them in a circular motion clock wise evenly to make like pancake.
5. When one side cooked well, cut them into square giving horizontal and vertical cuts.
6. Grind together, mustard paste, cumin seed, red chilli powder, coriander powder, turmeric powder, garlic and make a smooth paste.
7. Heat oil in kadai.
8. Add fenugreek seed, ground masala, tomatoes and salt.
9. Saute them till they all come together.
10. Then pour enough about water 2 cups and allow the gravy to boil.
11. Gently put pieces on it and boil for a second.
12. Then remove and garnish with chopped coriander leaves.
13. Serve hot with plain Rice or Chapati.
