Papad ki SabziPapad Ki Sabzi is a delicious dish inspired from the Rajasthan state of India. The preparation demands very few ingredients yet it has distinct and wonderful flavour. It is easy to make and can be prepared in various ways; among them two are as follows.

Ingredients of Papad Ki Sabzi

•200 gm papad (fried and broken into 2/3 inch pieces)
•6 tbsp ghee
•300 gm yogurt
•1 tsp cumin seeds
•2 tbsp coriander powder
•1 tsp red chilly powder
•1 tsp turmeric powder
•4 tbsp ginger-garlic paste
•1 tsp chopped ginger
•1 tbsp chopped green chillies
•2 tbsp chopped fresh coriander
Salt to taste.

Method of Preparing Papad Ki Sabzi

•Heat ghee in a pan and add the cumin seeds.
•When they start to crackle add ginger-garlic paste, red chilly powder, coriander powder and turmeric powder.
•Fry for 3-4 minutes over medium heat, add chopped ginger and green chillies.
•Then add the beaten yogurt and fry for another 3 minutes.
•Add 1 cup of water and bring to a boil.
•Put the papad pieces into the boiling gravy and lower the flame to a simmer and cook for 6 - 7 minutes.
•Season to taste, remembering that papad is already salted.
•Garnish with fresh coriander.

Another method of preparing Papad Ki Sabzi with variation in the ingredients used:

Ingredients of Papad Ki Sabzi

•10 Papad
•3 tbsp oil
•1 tsp cumin seeds
•1/8th tsp asafoetida
•1 large finely chopped onion
•1 tbsp, finely chopped garlic
•1/2 cup sour yogurt
•1/2 cup + 4 cups water
•2 tbsp coriander powder
•1 tsp turmeric powder
•Red chilli powder to taste
•Salt to taste
•1 tsp or to taste amchoor/ dry mango powder
•Cilantro for garnish

Method of Preparing Papad Ki Sabzi

•Fry the papads or one can even add them in the curry raw.
•Break them into pieces.
•In a pan, heat the oil and add in the cumin seeds and allow them to splutter.
•Add in the asafoetida and the finely chopped onions and garlic.
•Sprinkle a little salt to speed up the cooking process and allow the onions to get a little colour.
•Meanwhile, work on the ingredients for the gravy, in a cup mix the yogurt and 1/2 cup of water.
•To the yogurt mix add coriander powder, turmeric powder, red chilli powder and salt. Mix well.
•Once the onions are done, turn down the heat to the lowest and add the yogurt/water mix while stirring constantly.
•Keep stirring and once the mixture is all in the pan, increase the heat to a medium.
•Allow the mixture to reduce and the oil to separate.
•Add the broken pieces of papad and mix.
•Add balance of the water (4 cups) and allow it to cook for 8-10 minutes.
•Adjust the spices and the flavours as needed. Add amchoor if the yogurt is not sour enough.
•Garnish with Cilantro.
•Serve hot.

Papad Ki Sabzi is easy to make and can be prepared at home. It is an ideal delicious dish to serve the guests when invited for any occasion or party. It can easily be enjoyed with roti, paratha or bread.
