Sajana Phula Rai, Oriya RecipeSajana Phula Rai is a traditional delicacy from the land of Odisha. It is prepared with the flowers of Drumstick plant. Sajana Phula Rai is simple to prepare and can be teamed up with rice or chapattis. It is nutritious and can be made at home.

Ingredients of Sajana Phula Rai:

•1 cup Moringa oleifra blossoms or sajana blossoms.
•1 teaspoon mixture of cumin, mustard, nigella, fenugreek and aniseed.
•1 medium onion finely chopped.
•2 tablespoons cooking oil.
•2 pods garlic crushed.
•2 tablespoon beaten yoghurt.
•A pinch of turmeric powder.
•Green peas (may or may not be added)
Salt to taste
•Chili powder to taste

Method of Preparing Sajana Phula Rai:

•De-stem the sajana blossoms but retain the petals.
•Wash and drain them.
•Heat the oil and add the mixture of cumin, mustard, nigella, fenugreek and aniseed.
•Add the blossoms, turmeric, salt and chili powder and mix properly.
•In a minute or two, the blossoms will become tender. If it does not, sprinkle some water to wilt the florets.
•Then add yoghurt, take off the heat.
•Serve hot.
