Dahi Kadi

Dahi kadi is a popular dish of Punjab. It is nutritious and can be tasted with various dishes like steamed rice, khichdi etc.

Dahi KadiDahi kadi is a light curry from the land of Punjab state of India. It can be clubbed with various items like steamed rice, khichdi etc. Dahi kadi is easy and quick to cook and can be prepared in various versions. Among them two are as follows.

General Ingredients of Dahi Kadi

•Yoghurt, sour 2 cups

•Jaggery 2 tbsp.

•Bengal gram flour 2 tbsp.

Ginger 1" piece

Curry leaf stalks 2-3 nos.

Coriander leaves 1/2 cup

•Green chillies 2 nos.

Salt to taste

For Tempering

Cinnamon 1" piece

Cloves 5 nos.

Fenugreek seeds 1/4 tsp.

Cumin seeds 1/2 tsp.

Asafoetida powder 1/4 tsp.

•Oil 1 tbsp.

Method of Preparing Dahi Kadi

•Whip the sour yoghurt and add enough water to obtain a pouring consistency.

•Add gram flour to it and set aside.

•Scrape the ginger and finely chop and slit green chillies in two and set aside.

•Chop the jaggery, wash, chop the coriander leaves and set aside.

•To the yoghurt mixture add the chopped ginger, the jaggery and salt to taste.

•Heat oil in a pan.

•Add mustard seeds, cumin seeds and curry leaves.

•Add slit green chillies and asafoetida.

•Add the yogurt mixture and stir constantly till it boils.

•Cook on slow flame for 5-8 minutes.

•Serve hot with white steamed rice or khichdi

Ingredients of Maharashtrian Dahi Kadhi

•1 cup dahi

•2 tablespoons besan

•1 tablespoon of cooking oil

•1 teaspoon mustard seeds

•1 cut green chilli

•1 tsp. methi seeds

•1 tsp. ginger paste

•1 tsp. asafoetida

•2 tablespoons of chopped coriander

•5-6 curry leaves

•Salt to taste

•1 cup water

Method of Preparing Maharashtrian Dahi Kadi

•Take Dahi and Besan in a container and whisk it until its texture looks smooth.

•Heat oil in a pan and add mustard and methi seeds. Let it split in oil, then add cut green chilli, ginger paste and let it golden brown in the oil.

•Add chopped coriander then curry leaves, salt and lastly asafoetida. Mix it well while on the stove.

•Add a cup of water in it and let the water start boiling.

•Add dahi and besan mixture to boiling water in the pan and on high heat or high flame of strove, start stirring it with spoon for 3 to 4 minutes.

•Add Kadhi.

•Serve.

Dahi kadi can be found in various restaurants of India. This preparation is nutritious and healthy. It is also an ideal side dish for serving the guests along with main course.
