Bhugi Bhaji

Bhugi Bhaji is a very popular recipe of the Sindhi cuisine.

Bhugi Bhaji, Sindhi CuisineBhugi Bhaji is a spicy and delicious vegetable preparation of the Sindhi cuisine. It is cooked using potatoes, brinjal, peas with lots of onions. Bhugi Bhaji is basically a side dish and can be served with hot rice or chapatis.

Ingredients:

•Potatoes - 2 large, cut into 4 pieces
•Brinjal - 1 large, cut into 4 pieces
•Green Peas - 1/2 cup
Onions - 2 large, finely chopped
•Green Chillies - 2 to 3, chopped
Ginger - 1 inch piece, chopped
•Garam Masala - 1/2 tsp
•Red Chilli Powder - 1/2 tsp
Coriander Powder - 1 tsp
•Pinch of Asafoetida
Salt to taste
•Water - 1/2 cup
•Coriander Leaves - 2 tbsp, finely chopped
•Oil
Cumin Seeds - 1/2 tsp

Method:

•Heat oil in a wok; add cumin seeds, onions and saute till brown.
•Add asafoetida, green chillies and ginger; and saute for a few seconds.
•Add potatoes, brinjal, green peas and salt, mix well.
•Sprinkle little water, cover the wok and cook for 4-5 minutes.
•Add all powdered spices; red chilli powder, garam masala and coriander powder. Again sprinkle some more water and mix well.
•Cover the wok and cook on medium low heat till vegetables are done. Occasionally stir it.
•Garnish with chopped coriander.
•Serve hot with rice or chapati.
