Zunka Bhakri is a traditional dish of Maharashtrian cuisine that has chickpea flour based wet mix and a tempering of fried onions, mustard seeds, curry leaves and ginger-garlic paste. This side dish is usually eaten with fresh and soft jowar or bajra 'Bhakri'. Bhakri is a round flat unleavened roti made of jowar flour or bajra flour. This is a staple food of rural Maharashtra. Known as poor man's food, Zunka Bhakri is definitely not poor when it comes to the taste buds. This recipe also serves as an interesting option for diabetics and weight conscious people as it is high in fibre because of the use of whole grain flours.
Ingredients for Ghol:
Water - 1 glass
Onions - 2, finely chopped
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Curry Leaves - 6 to 7
Coriander Leaves - 7 to 8
Besan or Gram Flour - 1 cup
Ingredients for Sabzi:
Refined Oil - 4 tsp
Mustard Seeds - 1/2 tsp
Cumin Seeds - 1/2 tsp
Garlic Paste - 1/2 tsp
Ginger Paste - 1/2 tsp
Onion - 1 small, finely chopped
Green Chillies - 1/2 tsp
Salt to taste
Add water in bowl. Mix in the onions, red chilli powder, turmeric powder, curry leaves, coriander leaves and gram flour.
Stir all well. The consistency should be liquid like. Keep it aside.
In a wok heat some oil. Add mustard and cumin seeds.
Mix in the ginger and garlic paste.
Add the onions and green chillies.
Saute for 2-3 minutes till the onions turn brown.
Once done add the Ghol prepared previously to the above masala.
Cook for about 5 minutes, till all the water evaporates and a thick yellow paste like residue is left.
Serve hot with Bhakri.
