Shahi tukre is a delicious Hyderabadi dessert recipe relished in various states of India. It is a rich bread pudding with dry fruits, flavoured with cardamom. It is a simple and less time consuming recipe. It can be prepared even at home.
Ingredients of Shahi Tukre
6 slices sandwich bread
2 cups milk
3/4 cup cream
100 g mava
4 tbsp or as per taste sugar
6 Cardamoms
Pinch saffron
Handful cashew nuts
A few drops rose water
Ghee for frying
For Garnishing
Silver leaf and some Rose petals
Method of preparing Shahi Tukre
Remove the crust from the bread and cut into long shapes.
Fry the bread pieces in ghee till golden brown. Then arrange on a plate.
Heat milk; add the sugar and saffron and a few drops of rose water. Let it become slightly thick.
Now pour the milk on the arranged bread slices.
Allow the bread to soak up the milk and then rearrange the bread pieces on a decorative plate.
Heat 2 tsp of ghee and slightly fry the crumbled mava, cardamom powder and 2 tsp sugar.
Spread the mava layer on the soaked bread pieces.
To the cream, add rose water.
Cover the mava with the cream layer and decorate with silver leaf, nuts and rose petals.
Serve warm or cold.
Another method of preparing chumchum with minor change in the ingredients:
Ingredients of Shahi Tukre
6 slices bread
2 cups milk
4 tablespoons sugar
3 - 4 strands saffron
A few drops kewra essence
100 grams mawa crumbled
1 teaspoon green cardamom powder
3/4 cup fresh cream
1 sheet silver warq
10 cashew nuts, chopped
1 tablespoon sunflower seeds
Ghee to deep fry
A few rose petals
Method of preparing Shahi Tukre:
Heat sufficient ghee in a kadai and fry the bread pieces till they turn golden brown.
Drain and arrange on a plate.
Heat milk; add three tablespoons of sugar and saffron and a few drops of essence. Pour over the bread slices.
Allow the bread to soak up the milk, and then arrange the bread pieces on a decorative plate.
Heat two teaspoons of ghee and lightly fry crumbled mawa, green cardamom powder and one tablespoon of sugar.
Spread the mawa layer over the soaked bread pieces.
Add a few drops of essence to fresh cream.
Cover the mawa with a layer of cream and decorate with silver warq, chopped cashew nuts, and Rose petals.
Serve warm or cold.
This mouth watering sweet dish can be consumed as a breakfast and evening snack item. It can also be served to the guests during occasions like Diwali, Rakhi etc.
