Gahat Ki Dal, Ancient Recipe of UttarakhandGahat Ki Dal is the speciality of Uttarakhand, a Garhwali and Kumaoni dish. This dal has a warming effect on the body in cold winter days, and is prized for its medicinal value for the treatment of kidney stones. It is a simple preparation. Gahat is also known as "Kulith" and is originally "Horsegram".

Ingredients for Gahat Ki Dal:

•Horsegram - 1/4 cup
Rice Flour - 1 tsp
Garlic - 5 to 6 cloves
Ginger - 1 inch piece
•Butter - 1 tsp
•Oil - 3 tsp
Cumin Seeds - 1/2 tsp
•Red Chilli Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Salt to taste
Asafoetida - 1/4 tsp
Turmeric powder - 1/4 tsp
•Gandherein - a small piece
•Coriander Leaves - 1 tbsp, finely chopped

Method:
1. Wash and soak the kulith for 2 to 3 hours or overnight.
2. Add a cup of water and pressure cook the same for 7 to 8 whistles.
3. After the pressure comes down, remove and put in kadai.
4. Add red chilli powder, coriander powder, salt, turmeric powder, garlic and bring to boil, simmer.
5. Add little water in the rice flour and add the paste to the dal.
6. Simmer for 5 minutes.
7. Heat oil in a pan, add cumin and asafoetida.
8. When it is done add to the dal.
9. Before serving, add a blob of butter in it.
10. Gahat ki dal is ready to serve.
11. Garnish with coriander leaves.
12. Serve hot with rice, chapati and phulka.
