Date KheerDate Kheer is a delicious dessert which finds its presence in various celebrations and occasions. The preparation is very healthy as the dates are rich in vitamins and minerals. Also, it is easy and quick to prepare. Date Kheer is made using minimal ingredients like dates, milk, saffron, cardamom, ghee and sugar. The saffron and cardamom of the Date Kheer help this preparation to be digested easily.


Ingredients of Date Kheer

•One cup of dried dates
•Five cups of milk
•A pinch of saffron
•One-fourth teaspoon of cardamom
•One tablespoon of ghee
•One teaspoon of charole nuts (optional)
•Half cup of sugar

Method of Preparing Date Kheer

•To prepare Date Kheer, soak the saffron in a tablespoon of milk for about ten minutes.
•Separate the seeds from the dates.
•Blend the dates with a cup of milk and make a liquefied paste.
•Bring to a low boil, the remaining four cups of milk and add the cardamom, charole nuts, soaked saffron and the blended dates.
•Pour in the sugar and ghee and stir. Continue boiling for nearly five minutes at a gentle boil. It should be occasionally stirred to prevent sticking and getting burnt.
•Serve hot or chilled.

Date KheerAnother method of preparing Date Kheer:

Ingredients of Date Kheer 15 dates
•2 and 1/2 cups boiled milk
•1/4 cup coconut milk
•1 tbsp chopped dates
•1 tbsp chopped cashew and badam
•A small pinch cardamom powder
•1 tsp ghee

Method of Preparing Date Kheer

•Soak dates in 1/2 cup warm milk for 15mins.
•Chop the nuts and dates.
•Heat ghee in a pan - add nuts and dates and fry till crispy.
•Put the soaked dates to a mixer, add little milk used for soaking and grind it to a semi fine paste.
•Boil milk and let it cook for 5mins and then add dates paste.
•Give a quick mix and keep in low flame and cook for 5-7mins till it becomes slightly thick.
•Add ghee roasted dates and nuts mixture, cardamom powder, coconut milk and give a quick stir. Switch off.
•Serve hot or chilled

This delicious dessert is usually served after the main meal. However, it can also be eaten at any time as a single dish. This nutrition enriched food item can be served during occasions like Bhai Phonta, Raksha Bandhan, birthday etc.
