Dahi Bhalla
Dahi Bhalla is one of the major Punjabi dishes. It is similar to that of South Indian Dahi vada except that it has no hole in it.

Dahi Bhalla, Punjabi CuisineDahi Bhalla is a delicious dish popular in the Punjab state of India. It is similar to South Indian Dahi vada. The basic ingredients of Dahi Bhalla are urad dhuli daal and curd. It is easy to make and can be prepared at home.

Ingredients of Dahi Bhalla

•Urad Dhuli Daal -250 gm
•1 litre water
Onion - 1 chopped finely
Ginger - small pieces - chopped
•Green chillies - 2 chopped
Cumin seed - 1/2 tsp
Salt - 1/2 tsp
•Soda-bi-carb - 1/4 tsp
Oil for frying
Curd - 750 gm

Method of Preparing Dahi Bhalla

•Wash and soak dal in enough water and leave it for around 3- 6 hrs.
•Drain water and grind, add chopped onion, ginger, salt, cumin seed and soda.
•Leave the mixture covered with a wet towel.
•Heat oil in a pan. With moistened hands, make small Ballas with daal batter.
•Deep fry - each Bhalla till they turn light brown.

Method of Serving Dahi Bhalla

•Serve once all the Bhallas are fried as well as cooled down.
•Before serving soak them in water for about ten minutes.
•Press the water out of Bhalla and put them in beaten yoghurt.
•Add some salt, roasted jeera in it.
•Garnish them with ginger juliens.

Another method of preparing Dahi Bhalla with slight change in the ingredients:

Ingredients of Dahi Bhalla

•1 1/2 cups split black gram skinless
•1 teaspoon red chilli powder
•15-20 raisins
Asafoetida a pinch
•Oil for deep-frying
•6-7 cups yogurt
•1 teaspoon rock salt
Mint chutney to taste
•2 teaspoons roasted cumin powder
•Fresh coriander leaves chopped 2 tablespoons
•Ginger, cut into thin strips 1 inch piece
•2 Green chillis chopped
•Sweet date and tamarind chutney to taste
•Salt to taste

Method of Preparing Dahi Bhalla

•Firstly, wash and soak dal in three cups of cold water overnight. Drain off excess water the following day.
•Grind dal to a smooth paste.
•Whip half a teaspoon of salt and red chilli powder, raisins and asafoetida into the batter.
•Heat oil in a kadai. Drop batter in tablespoonfuls in it and fry until they turn light golden. Drain onto an absorbent paper. Bhallas are ready.
•Put the bhallas in hot water. Leave for two minutes. Press between palms to drain out water.
•Whip yogurt evenly with rock salt and salt to taste.
•Place the bhallas on a plate and cover with yogurt.
•Add mint chutney and tamarind chutney.
•Sprinkle red chilli powder and roasted cumin powder.
•Garnish with ginger julienne, coriander leaves, and chopped green chillies.
•Serve.

This mouth watering Dahi Bhalla can be consumed at any time of the day. It can be served with chutneys as per preference.
