Dhuska

Dhuska, a kind of deep fried pancake is served along with Ghugni. It is traditional recipe from Bihar as well as Jharkhand.

Dhuska, Bihari CuisineDhuska is one of the snacks of Bihar and Jharkhand. This recipe is specially prepared during festivals like Durga Puja and Holi, which is very easy to prepare. Serve it with a simple `Aloo Sabzi` and it would make a wonderful mouth watering combination. Dhuska is a deep fried pancake of rice and lentil batter which resembles to "Bonda" or "Vada" in taste that is made in Tamil Nadu. Dhuska is traditionally served with Chana Ghugni.

Ingredients:

•Rice - 2 cup
•Chana Dal - 1/2 cup
•Urad Dal - 1/2 cup
Ginger - 1/2 inch piece
•Green Chilli - 2 finely chopped
•Green Peas - 1/2 cup (optional)
Coriander leaves - 2 tbsp minced
Turmeric Powder - 1/4 tsp
Cumin seeds - 1/2 tsp
•Water as required
Salt to taste
•Oil for deep frying

Method:

•Soak the rice, chana dal and urad dal for atleast 6-8 hours.
•Grind it to a smooth paste with ginger, green chilli and cumin seed into smooth paste.
•Now add green peas, coriander leaves, salt and turmeric powder to the batter and mix well with water as needed.
•Heat oil in a pan.
•Pour ladle full of batter into hot oil and fry both sides until golden.
•Transfer and place it on the paper towel to remove excess oil.
•Serve hot with Chana Ghugni.

Note:

•Batter should be of medium consistency. The batter should be little thinner than the dosa batter consistency.
•Do not over fry the puris, it will become more crispy.
