Dala Khechidi is a traditional dish of Odhisa state of India. It is usually prepared as a prasad of the Shri Jagannath temple in Baripada of Odhisa. The basic ingredients of this recipe are rice and moong dal including some other spies.
Ingredients of Dala Khechidi:
250gms rice
200gms moong dal
1/2 tea spoon turmeric powder
1 table spoon cumin seeds
1 pinch asafoetida
100gms pure ghee
3 - 4 red chillies
2 bay leaves
2 inches cinnamon
4- 6 cardamom
Salt to taste
Method of Preparing Dala Khechidi:
Add 2 to 3 teaspoon pure ghee and turmeric powder in the rice and dal.
Mix well and spread on a plate to dry for 10 minutes.
Crush cinnamon and cardamom and prepare garam masala powder.
Heat the pressure cooker and put the rest of pure ghee into it.
Add the cumin seeds, bay leaves and red chillies.
Also add a pinch of turmeric powder.
Then add the rice and dal mixture to it.
Stir for about 1 minute.
Add water. The quantity of water should be almost double the quantity of rice and dal mix.
Add salt and garam masala powder.
Close the cooker.
Cook it on medium flame.
After one whistle put off the flame. Open the lid after sometime.
Serve hot.
Another easier method of cooking Dala Khechidi with some changes in the ingredients:
Ingredients of Dala Khechidi:
Rice 1cup
1 cup green gram dal
18-20 resins
10-12 cashew nuts
3 cm ginger
1/2 cup coconut
2 tablespoon sugar
1 teaspoon cumin seeds
4 pcs cinnamon
4-5 cardamom
10-12 green chillies
1/2 cup refined oil
1 tablespoon ghee
Turmeric powder
Salt to taste
Method of Preparing Dala Khechidi:
Firstly, wash the rice and dal properly.
Then cut the coconut into small pieces.
Put oil in a kadhai and fry the coconut pieces and cashew nut. Keep it aside.
Chop the ginger and chillies.
Heat oil and put the cumin seeds and cardamom and cinnamon pieces. Add the rice and dal. Put the chopped ginger and chillies, salt and turmeric powder and fry it for 10-15 minutes.
Add five cups of water to it.
Put the resins, cashew nuts, sugar, fried coconut pieces and cover the lid.
Take out when cooked.
Serve hot.
Dala Khechidi is a very easy recipe and one can make it at any time. It can be consumed as a lunch or dinner food item. The dish can be teamed up with chutney or ghee.
