Ingredients of Cucumber Thalipeeth
1 cup sooji
1 cucumber, peeled and grated
2 green chillies, crushed
2 teaspoons chopped coriander
Salt to taste
Ghee for shallow frying
Method of Preparing Cucumber Thalipeeth
Mix grated cucumber, sooji, crushed green chillies and chopped coriander.
Add salt and make soft dough like chapati dough.
Add little water if required.
Meanwhile grease a griddle and heat it.
Make 3 inch balls of the dough.
Take a clean plastic sheet and grease it with ghee on one side.
Place one ball on the centre of the sheet and flatten with hand.
Keep flattening in circular motions to make a round uniform disk.
Dip hand in water, if required so that the dough does not stick to the hand.
Once the griddle is hot, turn heat to medium.
Lift the disc along with the sheet gently and turn the sheet over the greased griddle.
Transfer the disk to the griddle.
Quickly remove the plastic sheet.
Make 5 holes at different places on the round disk with finger.
Pour ghee on the edges and in the 5 holes.
Cover for a few minutes.
Remove the lid after a few minutes and turn it upside down.
Cook for a few minutes more, till crisp.
Serve hot.
Another method of preparing Cucumber Thalipeeth with slight change in the ingredients:
Ingredients of Cucumber Thalipeeth
1/2 cup rice flour
1/2 cup wheat flour
2 cups cucumber grated
1 tbsp chopped fine green chilli
1/4 cup chopped green onion
1 tsp cumin
1/4 tsp turmeric
Salt to taste
Cooking oil
Method of preparing Cucumber Thalipeeth
Mix the flours (rice and wheat), salt, onions, chilli, cumin and turmeric.
Mix the grated cucumber to the mixture and make a thick batter. Keep it aside for 15 -20 minutes.
Heat a non-stick pan.
Drop 1/2 tsp oil and spread it well.
Drop a blob of batter on the pan and spread it into a round shape with hands.
Make a hole in the centre on the round and fill it with oil.
Let it cook and check to see by lifting with a flat spatula to check for brown spots on underside.
Spread a little oil on top and turn.
Cook on the other side till done.
Serve hot.
Cucumber Thalipeeth can be teamed up with butter, tomato chutney or pickle. This yummy food item can be eaten both as breakfast and evening snack.
