Rava LaddooRava Laddoo is a delicious sweet dessert popular in India and is often offered to the God as Prasad. This traditional sweet is immensely popular during various Indian festivals like Diwali, Ganesh Chaturti, weddings or even when there is a small occasion in the family.

The preparation of this dessert requires simple ingredients like semolina (rava), ghee, little milk, sugar, dry fruits and cardamom. It can be made in different variations like some use the saffron colour and some prefer the natural colour. It is usually round in shape with a soft texture. This mouth watering recipe is easy to make and can be prepared at home.

Ingredients of Rava Laddoo

•1-1/2 cups of rava / sooji / semolina, lightly pulsed to make a coarse powder in the blender
•1/4 cup of homemade ghee
•1/4 cup dry fine desiccated coconut
•1/2 cup of sugar, finely powdered
•1/4 cup of cashew nuts, finely powdered
•1/2 teaspoon of cardamom powder
•1/4 cup raisins
•1/4 cup cashew nuts, roughly halved

Method of Preparing Rava Laddoo

•Firstly, heat a teaspoon of ghee in a small pan on low heat then roast the cashew nuts until lightly golden and crisp. Once roasted add in the raisins and saute for a few seconds. Turn off the heat and keep this aside.
•Heat one fourth cup of ghee in a heavy bottomed pan; add in the rava / semolina to the pan. Roast the rava until it produces a roasted aroma and it is turning lightly golden. It is important to roast the rava, stirring continuously on very low heat. High heat can cause the rava to brown.
•Once roasted add in the remaining ingredients included the roasted cashew nuts and raisins.
•Saut‚ for just a few more seconds until the mixture is well combined. Allow it to cool slightly. Once cooled, shape the rava laddo mixture into 15 equal size balls.
•Serve.
•It can be stored in an air tight container for about 2 weeks.
