Pani Kakharu Sakara, Oriya RecipePani Kakharu Sakara is an Indian recipe mostly popular in the land of Odisha. This dish is easy to prepare and good to consume. Its low on calorie hence is a delight for the calorie conscious people.

Ingredients of Pani Kakharu Sakara

•1 Cup chopped white gourd
•1 Table spoon panch phutan (cumin, mustard, nigela, fenugreek, aniseed)
•1/2 Cup grated coconut
•1/2 Cup tamarind water
•1/2 Cup sugar or jaggery or gur
Curry leaves as per requirements
•4 Dried black-gram chunks or baddis
•2 Red chillies
•2 Teaspoon pickle masala
•1 Table spoon cooking oil
Salt to taste

Method of Preparing Pani Kakharu Sakara

•Heat oil in a frying pan.
•Add the pancha phutan, curry leaves and baddi to it.
•When the baddi turns brown add the chopped white gourd.
•Then add pickle masala, sugar or jaggery and salt.
•Add water after a while.
•Cook until the white gourd becomes soft.
•Top it with grated coconut.
•Boil for 2 minute more.
•Serve.

Pani Kakharu Sakara can also be made in the following way with a slight variation in the ingredients and preparation procedure:

Ingredients of Pani Kakharu Sakara

•600gm water gourd
•20gm coconut
•20 gm tamarind
•100gm Jaggery
•4-5 Curry leaves
•2 Pcs Bay leaves
•1 tbsp Refined oil
•1 tsp turmeric powder
•2 pcs dry chilli
•2tsp mustard seeds
•1 tsp fennel seeds
•Salt as per taste

Method of Preparing Pani Kakharu Sakara

•Peel the water gourd and cut into small pieces.
•Crush the coconut.
•Soak the tamarind in water for 10 min. Take out the pulp and keep aside.
•Take half cup of water in a deep pan. Boil it and when starts boiling add tamarind pulp and Jaggery.
•Again boil it for some time till it`s well boiled. Now add the water gourd pieces.
•Add turmeric powder, crushed coconut, and salt to it. Stir properly and cover it.
•Cook it in a low heat till the water gourd is well cooked. Remove from flame and keep aside.
•Heat oil in a deep pan and add mustard seeds, bay leaf, curry leaf, fennel seeds and dry chilli. When it starts spluttering add the pre-cooked water gourd. Cover it for 2 min. stir it and remove from flame.
•Serve.

Pani Kakharu Sakara can be prepared at home and can also be seen in various restaurants. People can team up this mouth watering side dish with boiled rice, roti or paratha.
