Aktori, Ancient Recipe of Himachal PradeshAktori is an ancient recipe from the dry valleys of Lahaul-Spiti in Himachal Pradesh. It is a kind of cake. The buckwheat leaves are mixed with the flour of wheat and then prepared in pancakes. Aktori is generally served with Ghee and Honey. It is considered to have originated from the Lahaul-Sipti Valley but it can be found in almost every part of Himachal Pradesh. Among the festive season food, Aktori is also equally enjoyed by the people in Himachal Pradesh.

Ingredients for Aktori:

•Buckwheat Flour - 1 cup
Wheat Flour - 1 cup
Milk - 1/2 cup
•Water - 1/2 cup
•Baking Soda - 1 tsp
•Sugar - 4 tbsp
•Oil to fry

Method:
1. In a bowl, mix buckwheat flour and wheat flour together.
2. Now add milk and water in equal quantity. Mix this into a fine thick batter.
3. Add a teaspoon of baking soda to it and again mix well.
4. Lastly, add sugar as per the taste and keep aside to rest for few minutes.
5. Now take a frying pan and heat a tablespoon of oil.
6. Pour a ladle full of batter in the pan and spread it little bit. Cook this on low flame.
7. When small bubbles are seen on the surface of the cake, flip it over and cook the other side for few more minutes.
8. Once both the sides get cooked, take it out on a plate.
9. Serve the Aktori with ghee or honey as topping.
