Muga Dali Kakara, Ancient Recipe of OdishaMuga Dali Kakara is an ancient sweet preparation of Odisha which is now traditionally prepared on special occasions and festivals served as a dessert item. Given the fondness for sweet foods, the dessert course may include generous portions of more than a single item. In Oriya cuisine, desserts are made from a variety of ingredients like milk, Chena (a form of cottage cheese), coconut, rice and wheat flour being the most common.

"Muga Dali" is type of lentil cooked with coconuts and mild spices. A "Kakara" is a kind of pitha which is a deep fried sweet dish like "Arisa Pitha" but made of wheat or maida flour and coconut, jaggery, black pepper, edible camphor and Chena stuffing.

Ingredients for Muga Dali Kakara:

•Moong Dal - 2 cups, soaked
Wheat Flour - 3/4 cup
•Semolina - 1 and 1/2 cups
Black Pepper - 1/2 tsp
•Jaggery - 1 and 1/2 cup
Cardamom Powder - 1/2 tsp
•Oil for deep frying
Salt to taste
•Water as per requirement

Method:
1. Soak the moong dal before start the recipe.
2. Take soaked moong dal in a pressure cooker with 2 cups water and pinch off salt. Cook it until 3 to 4 whistles.
3. Take out the boiled dal and keep it aside for 5 minutes.
4. Then take a kadhai and add all the boiled moong dal in it.
5. If the consistency is thicker then add some water and salt into it.
6. Then add semolina and wheat flour to it. Stir continuously to make a soft dough.
7. Now take out the dough from flame and allow it to cool.
8. Make small balls from this dough and give it a thick round with the help of the palms.
9. Now take a kadhai and add oil for deep frying.
10. When the oil became hot, fry that thick Kakaras in oil till they become golden brown.
11. Take them out and allow it to cool.
12. Muga Dali Kakara is ready to eat.
