Carrot Cinnamon Muffins are one of the delicious confectionaries popular in varied parts of India. This food item is easy to make and can be prepared in different ways.
Ingredients of Carrot Cinnamon Muffins
1 Cup plain flour
1 Cup whole wheat flour
1 Cup powdered sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon powder
1-1/4 Cup milk
3/4 Cup melted butter
1 Cup carrot grated
1/2 Cup raisins
Method of Preparing Carrot Cinnamon Muffins
Sieve together the dry ingredients 2-3 times.
Mix milk and butter till well blended.
Gently stir in sieved ingredients.
Fold in carrot, raisins. Do not mix too much, lumpy batter makes better muffins.
Bake in pre-heated oven at 200 degrees Celsius, for 20 minutes or till an inserted skewer comes clean.
Serve.
Carrot Cinnamon Muffins can also be made in the following method. Unlike the previous one, the ingredients of this recipe comprises of eggs.

3/4 Cup all-purpose flour
1/2 Cup whole-wheat flour
2 Tablespoons wheat germ
1 Teaspoon ground cinnamon
1 Teaspoon baking powder
1/2 Teaspoon baking soda
1/8 Teaspoon kosher salt
1/3 Cup vegetable oil
1/3 Cup buttermilk
2 Large eggs
3/4 Cup light brown sugar
2 Cups finely grated carrots
Method of Preparing Carrot Cinnamon Muffins
Firstly, pre-heat oven to 350 degrees.
Then line a standard muffin tin with paper cups.
Fluff up flours, wheat germ, cinnamon, baking powder, baking soda, and salt in a bowl. Fluff up remaining ingredients in a separate bowl. Fold dry ingredients into wet and mix until just combined.
Spoon batter into cups.
Bake until a toothpick inserted in the centre of a muffin comes out clean, about 22 minutes.
Cool in pan for 15 minutes, then transfer to a wire rack to cool slightly.
Serve.
