Dalma is a traditional dish of Orissa that is prepared from arhar dal or pigeon pea.

Dalma, Oriya Recipe Ingredients for Dalma:
  • 100gms arhar dal, toor dal or pigeon pea
  • 50gms striped pear gourd
  • 1 big onion chopped
  • 50gms potato
  • 50gms raw papaya
  • 1/2 teaspoon mustard
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds powder
  • 3-5 dry chili
  • 1/2 tea spoon chili powder
  • 3 teaspoon refined cooking oil
  • Salt to taste


  • Method:
  • Cut the potatoes and other vegetables into small pieces
  • Take a pressure cooker and add the vegetables, the dal, turmeric powder and salt and cook them on medium heat.
  • After a whistle take the cooker off the gas and release the pressure from the cooker.
  • Open the lid
  • Take a frying pan, heat it and add 3 teaspoon of refined oil.
  • Add bay leaves, cumin seeds, mustard, chopped onions and the dry chillies. Fry till golden brown
  • Add this to the boiled vegetables and dal. Mix well.
  • Add the chilli and jeera powders.
  • Close the lid of the cooker and heat for 2 minutes
  • Serve hot with rice or chapatti


  • Besides potatoes, other vegetables, like, pumpkin, brinjal, etc can be added. One can also use ghee instead of refined oil for frying.
