Dalma is a traditional dish from Orissa.
Ingredients for Dalma:
100gms arhar dal, toor dal or pigeon pea
50gms striped pear gourd
1 big onion chopped
50gms potato
50gms raw papaya
1/2 teaspoon mustard
1 teaspoon cumin seeds
2 bay leaves
1/2 teaspoon turmeric powder
1/2 teaspoon cumin seeds powder
3-5 dry chili
1/2 tea spoon chili powder
3 teaspoon refined cooking oil
Salt to taste
Method:
Cut the potatoes and other vegetables into small pieces
Take a pressure cooker and add the vegetables, the dal, turmeric powder and salt and cook them on medium heat.
After a whistle take the cooker off the gas and release the pressure from the cooker.
Open the lid
Take a frying pan, heat it and add 3 teaspoon of refined oil.
Add bay leaves, cumin seeds, mustard, chopped onions and the dry chillies. Fry till golden brown
Add this to the boiled vegetables and dal. Mix well.
Add the chilli and jeera powders.
Close the lid of the cooker and heat for 2 minutes
Serve hot with rice or chapatti
Besides potatoes, other vegetables, like, pumpkin, brinjal, etc can be added. One can also use ghee instead of refined oil for frying.
