Andhra Pradesh Receipes

The cuisine of Andhra Pradesh is well renowned not just in the country but also amongst the gourmet all over the world. The most enchanting factor of the cuisine of Andhra Pradesh is the amalgamation of the delicious Southern and genteel Deccani style of cooking.

Utthappam:
Ingredients
  • 1/2 cup Semolina(Rava/Sooji)

  • 1/2 cup Gram flour(Kadalapodi)

  • 1/2 cup Allpurpose flour(Maida)

  • 1/4 cup Yoghurt/Curd

  • 1/2 of one Onion(chopped)

  • 4 Green chillies

  • 1/2 cup Coriander leaves(chopped)

  • 1/8 tsp Turmeric powder

  • 1/8 tsp Cumin (Jeerakam) powder

  • 1/8 tsp Red chilly powder

  • Salt to taste

  • Oil


  • UtthappamMethod
    1. Mix together rava, gram flour or besan and maida.
    2. Add chopped onion, chopped green chillies and curd.
    3. Add salt, tumeric powder, chilly powder, cumin powder and water and make it into a paste. The paste should neither be too thick nor too watery.
    4. Mix all ingredients well in a bowl.
    5. Heat the pan.
    6. Spread oil on the pan with a spoon.
    7. Pour the mix on the pan and spread it in a circular fashion.
    8. Once a side has become golden brown, spread some oil and turn it on to other side.
    9. Serve hot with coconut chutney.

    Rumaali Roti:
    Ingredients
  • 1 ½ cup Whole Wheat Flour (Atta)

  • 50 gm Maida

  • ½ tsp Baking Powder

  • 2 tbsp Oil

  • Water to Knead


  • Method
    Rumaali Roti1. Mix wheat flour, maida, salt and baking powder and sieve then together.
    2. Pour oil in the flour and add water bit by bit and make smooth and elastic dough and set aside covered with moist muslin cloth for half an hour.
    3. Now make some balls of the dough and roll like a thin roti of about 12 inches diameter circle using little dry flour. Make sure that the roti is as thin as a tissue.
    4. Heat an inverted griddle (tawa).
    5. Place the roti over it and cook till done.
    6. Fold it like a handkerchief.
    7. Serve hot with hot vegetables.
