Ingredients for Rice kheer
Half cup of creamed rice
Eight cups of milk
Half cup of ghee
A pinch of saffron
One tablespoon of sliced almonds
One tablespoon of charole nuts (optional)
One-fourth teaspoon of cardamom
One cup of sugar
Method Rice kheer
Soak the saffron in one tablespoon of milk for ten minutes. Heat a medium sized pot and after some time add ghee. Stir in the creamed rice and keep stirring until it turns light brown and leaves out a fragrance. Pour in the milk and soaked saffron and to it add, the almonds, charole nuts, cardamom and sugar. Boil it for some time and keep stirring to prevent the formation of lumps. Cook and stir as it thickens for nearly two to three minutes. Turn off the heat and cover until it is ready to serve.
