Marathi Receipe- Kothambir Vade

Ingredients of Kothambir Vade
  • 1 cup Wheat flour (attat) sieved

  • 1 cup gram flour (besan) sieved

  • ½ cup coarsely pounded peanuts

  • Kothambir vade2 tbsp white sesame seeds

  • 1 tsp ginger garlic paste

  • 4 tbsp chopped Coriander leaves

  • 1 tsp chilly powder

  • 1 tsp sugar

  • ½ tsp garam masala

  • ½ tsp turmeric powder

  • ¼ tsp soda bicarbonate

  • Oil as needed

  • Salt to taste


  • Method of Kothambir Vade
    1. Mix the flours with sesame seeds, coriander leaves, peanut powder, chilly powder, turmeric powder, garam masala, soda bicarbonate, ginger-garlic paste, sugar and salt. Add water and make a thick paste.
    2. Heat 2 tbsp oil and add to the paste.
    3. Grease a deep platter and spread the paste evenly. Steam in an idli steamer or pressure cooker for 15 minutes. Do not use the weights. Cut into diamond shape pieces.
    4. Heat oil and deep fry these pieces.
    5. Serve hot with green chutney.

    Thalipith:
    Ingredients
  • Thalipith1 cup Whole Wheat Flour (atta)

  • 1 cup Bajra Flour

  • ½ cup rice Flour

  • ½ cup Besan

  • ½ tsp Chilly Powder

  • ½ tsp Turmeric Powder

  • 1 tsp Cumin Powder

  • 1 tsp Dhania Powder

  • Oil as required

  • Salt to taste


  • Method
    1. Mix the flours and roast lightly in a pan or a griddle.
    2. Add chilly powder, salt, turmeric powder, dhania powder and jeera powder.
    3. Knead with water to make firm dough.
    4. Roll into thin rotis and cook over a tawa (griddle), smearing oil on both sides, till crisp.

    Matki Chi Usal:
    Ingredients
  • 2 cups Green Grams

  • 2 Chopped Onions

  • ½ cup chopped Tomatoes

  • 1 tsp Coriander Leaves

  • Matki Chi Usal1 tsp Mustard Seeds

  • ½ tsp Asafoetida

  • 1 tsp turmeric Powder

  • 2 tsp Red Chilly Powder

  • ½ tsp Goda Masala

  • 2 tsp Grated Coconut

  • 1 tsp Jaggery

  • 1 tsp Peanut Powder

  • 2 tsp Oil

  • ½ tsp Salt

  • 2 cups Water


  • Method
    1. Soak Green Grams overnight. Boil for five minutes with ½ tsp turmeric powder and ½ tsp salt. Keep aside.
    2. Heat oil in a pan. Add mustard seeds, asafoetida and onions. Wait till onions turn translucent.
    3. Add tomatoes, turmeric powder and red chilly powder. Stir for ½ minute.
    4. Add the par boiled Green Grams. Add salt to taste. Add ½ tsp Goda Masala pr Garam Masala. Add Grated Coconut.
    5. Add Jaggery and peanut powder.
    6. Garnish with coriander leaves and desiccated coconut.
    7. Serve with jawar, roti or bread
